Recipe

This is a recipe for:

Cinnamon Walnut Coffee Cake
adapted from Sarah Kramer's book La Dolce Vegan (I obviously un-Vegan-ed it)

Topping:
1/2 c brown sugar (could use less)
2 T soft butter
1 t cinnamon
3/4 c finely chopped walnuts (Pampered Chef chopper does great)

Cake:
3/4 c plain or honey yogurt
1/3 c oil
1/2 c milk
1 t vanilla
1 1/2 c flour (I use whole wheat pastry flour)
1/2 c sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1 chopped apple (opt)
1/2 c raisins (opt)

350 degrees 9x9 greased dish
Mix topping ingredients in small bowl and set aside.
Mix wet ingredients in large bowl, add dry ingredients. Mix until incorporated.
Add apples and/or raisins.
Pour into baking dish, sprinkle with topping.
Bake 35-40 minutes. Yumm.
