TGIF - Hooray

Hooray for Friday. Hooray for the Chiropractor. Hooray for chats with friends. Hooray for being able to nap and nurse. Hooray for cute babies who smell good after a bath. Hooray for hubbies who come home with checks. Hooray for smoked gouda cheese. Yumm.

Recipe: 4 Cheese Baked Pasta with Roasted Vegies

1 bag penne pasta - cooked
1 jar of sauce
1 c. grated mozzarella cheese
1/2 c. grated romano or Parmesan cheese
1/2 c. grated smoked gouda cheese (where to find it? Grocery Outlet)
1/2 c. grated sharp cheddar cheese.
3-4 vegies for roasting, sliced (I used a zucchini, green pepper, 3 roma tomatoes, 1/2 onion, and some chopped eggplant.

Slightly grease a cookie sheet or broiler pan with olive oil. Place sliced vegies on pan and boil in oven until brown, but not burned. Turn over vegies and broil other side. Remove from pan and roughly chop.

Mix sauce with pasta. In a large casserole dish, scoop in half of pasta/sauce. Layer with all of the roasted vegies and 80% of the cheese. Add rest of pasta/sauce. Top with leftover cheese.

Bake in 350 degree oven for 30-40 minutes or until center is hot. Enjoy!
